<p>Famed foodie and co-owner of hot sauce brand <a href="https://www.instagram.com/twohotasians/?hl=en" target="_blank" rel="noreferrer noopener">Two Hot Asians</a>, Emily Yeoh is one of the headliners at this week&#8217;s <a href="https://mamashelter.com/london-shoreditch/calendar/" target="_blank" rel="noreferrer noopener">Festival of Women</a> <strong>(3-8 March) </strong>taking place at Mama Shelter in East London in the run up to <strong>International Women&#8217;s Day</strong>.</p>

<p>The festival has a packed schedule of female-led events aimed at championing women in the capital, including a self-love workshop with Kitty Underhill, comedy with Chloe Petts and live music from Graziella and friends. </p>



<p>However it&#8217;s Emily&#8217;s <a href="https://www.designmynight.com/london/whats-on/food-drink/iwd-a-supper-club-with-emily-of-two-hot-asians?t=tickets" target="_blank" rel="noreferrer noopener">supper club</a> on <strong>6 March </strong>(think wontons, epic crispy pork belly and fabulous dessert) that&#8217;s got us drooling. Muddy&#8217;s long been a fan of her work, from pop-up suppers in the city to spicy condiments, and we couldn&#8217;t wait to sit down and chew the fat (pork belly, obvs). </p>



<h2 class="wp-block-heading" id="h-your-first-job-in-a-kitchen">Your first job in a kitchen?&nbsp;</h2>



<p>Funnily enough, my first real experience in a commercial kitchen was running supper clubs for Two Hot Asians. It was honestly daunting at first, I felt like a fish out of water. But I’ve learned so much along the way, thanks to everyone I’ve partnered with. It’s also given me such a huge appreciation for everyone working in hospitality. Our first collaboration was with Aisling Chaudhuri and Robin Gill at Rye By The Water, and it was amazing.</p>



<h2 class="wp-block-heading" id="h-career-highlight-nbsp">Career highlight?&nbsp;</h2>



<p>It’s so hard to pick just one! Collaborating with incredible restaurants like <strong>Bone Daddies</strong>, <strong>Tandoor Chop</strong>, and <strong>Fatt Punditt</strong> has definitely been a highlight. And cooking at <strong>Mama Shelter</strong>? Twice?! The second supper club there is coming up on <strong>6 March</strong>, which I’m so excited about. That’s definitely up there for me. I’m just so grateful for all the opportunities that keep coming my way.</p>

<h2 class="wp-block-heading" id="h-did-you-do-a-lot-of-cooking-for-the-rich-and-famous">Did you do a lot of cooking for the rich and famous?</h2>



<p>I’ve had a few pop-up events where some familiar faces came by to show some love for the sauces, which is always nice. It’s been a real blessing to get that kind of recognition from people I admire.</p>



<h2 class="wp-block-heading" id="h-any-goss">Any goss?</h2>



<p>Ha, I could spill the tea, but I would never tell! Honestly, when I’m doing pop-ups, I’m too busy running around, making sure everything’s running smoothly to really pay attention to anything happening outside of the kitchen. But once service ends, I’ll occasionally hear about things… but hey, my pop-ups are a safe space!</p>



<h2 class="wp-block-heading" id="h-how-would-you-sum-up-your-cooking-style-and-food-philosophy">How would you sum up your cooking style and food philosophy?</h2>



<p>It’s all about big, bold flavours. I’m not about the fine dining, Michelin-type artful plating; my focus is on making sure the food has layers of flavour and hits all the right spots. You can count on it being delicious and packed with personality.</p>



<h2 class="wp-block-heading" id="h-most-memorable-moment-at-work-nbsp">Most memorable moment at work?&nbsp;</h2>



<p>There are too many moments to choose from, honestly. But seeing people light up after trying something I’ve made &#8211; that never gets old.</p>



<h2 class="wp-block-heading" id="h-you-re-tired-starving-and-impatient-what-do-you-cook-for-dinner-nbsp">You’re tired, starving and impatient: what do you cook for dinner?&nbsp;</h2>



<p>Oh, if I’m exhausted and need something quick, it’s salmon with a marinade of oyster sauce, soy sauce, sesame oil, sugar, ginger, and garlic, with some steamed rice (god bless the rice cooker) and either cucumber or avocado. It’s simple, tasty, and healthy. My son loves it too, so I know it’s a win. </p>

<h2 class="wp-block-heading" id="h-what-would-you-cook-to-impress-a-date-nbsp">What would you cook to impress a date?&nbsp;</h2>



<p>To impress a date, I’d make something that’s a bit of a showstopper &#8211; like a miso-glazed black cod with crispy skin, served with a side of wasabi mashed potatoes and sautéed bok choy. It’s a balance of bold, umami flavours, and it looks stunning when plated. Plus, it’s light but indulgent, so you can enjoy a nice glass of wine without feeling too heavy. But if he doesn’t eat fish, I’d probably just go with a steak &#8211; because you really can’t go wrong with a nice, juicy steak.</p>



<h2 class="wp-block-heading" id="h-who-is-your-favourite-chef">Who is your favourite chef?</h2>



<p>I’m lucky to know so many amazing chefs, and honestly, my favourites are all friends &#8211; Ana Da Costa, Dara Klein, Big Has, Leyli and Becci from Babhaus, Brad Carter, Mike Bagnall&#8230;the list goes on! They’re all doing something so different and exciting, and I always look forward to eating their food. They really inspire me with their creativity and passion for pushing boundaries in the kitchen. </p>

<p>I also have to mention Florence Knight &#8211; when I went to <strong>Sessions Arts Club</strong>, that was some of the best food I’ve ever had. Although she’s moved on now, I can’t wait to see what her next project is! And we really need to give props to all the female chefs in the industry. Not only are they some of the best, but they don’t get the recognition or flowers they truly deserve.</p>



<h2 class="wp-block-heading" id="h-do-you-have-a-favourite-cookbook-nbsp">Do you have a favourite cookbook?&nbsp;</h2>



<p>Yes! <em>All Under Heaven</em> by <strong>Carolyn Phillips</strong> is a big favourite. It’s an incredible, in-depth journey through China’s many regions, and it gives me all kinds of inspiration to experiment with different flavours and techniques in my cooking.</p>



<h2 class="wp-block-heading" id="h-what-s-your-favourite-type-of-cuisine-nbsp">What’s your favourite type of cuisine?&nbsp;</h2>



<p>Dim sum or tapas, for sure. I’m all about variety, and you get to try a bit of everything. Honestly though, I crave dim sum—especially Cheung fun—at least once a week.&nbsp;</p>



<h2 class="wp-block-heading" id="h-favourite-things-to-eat-when-you-re-on-holiday-nbsp">Favourite things to eat when you’re on holiday?&nbsp;</h2>



<p>Steamed fish and salad, but with chips on the side (because holiday vibes, right?). It’s like chips just belong with every meal when you’re on vacation!</p>



<h2 class="wp-block-heading" id="h-favourite-kitchen-gadget-nbsp">Favourite kitchen gadget?&nbsp;</h2>



<p>Can I have two? I can’t live without my rice cooker, and as a mum to a 10-year-old, the air fryer has been a total game-changer. It’s so handy for quick meals!</p>



<h2 class="wp-block-heading" id="h-favourite-ingredient-and-why-nbsp">Favourite ingredient and why?&nbsp;</h2>



<p>MSG, hands down. It’s the secret to unlocking deep, savoury umami flavour in so many dishes, and honestly, it gets such an unfair bad rap. A little bit goes a long way, and once you start using it, there’s no going back!</p>



<h2 class="wp-block-heading" id="h-most-overrated-ingredient-nbsp">Most overrated ingredient?&nbsp;</h2>



<p>Truffle oil. Don’t get me wrong, I love truffle, but sometimes truffle oil is used when it’s just not needed. It can easily overpower a dish rather than enhance it. I’d much rather use fresh truffle or something that balances the flavours better and lets the other ingredients shine.</p>



<h2 class="wp-block-heading" id="h-tell-us-your-best-ever-cooking-tip-nbsp">Tell us your best ever cooking tip?&nbsp;</h2>



<p>Always trust your instincts and don’t be afraid to go bold with your flavours. A little extra spice or a dash of vinegar can really bring a dish to life. And taste as you go &#8211; it’s the best way to make sure everything&#8217;s hitting just right.</p>
